Cette m\u00e9thode s'applique aux matrices laiti\u00e8res suivantes: lait, lait concentr\u00e9 sucr\u00e9, lait en poudre, fromage, lactos\u00e9rum en poudre, formule infantile, dessert lact\u00e9 et yaourt.<\/p>\n
Cette m\u00e9thode ne s'applique pas aux produits laitiers contenant du soja ni \u00e0 la d\u00e9termination de la teneur en lactose des produits laitiers \u00e0 faible teneur en lactose inf\u00e9rieure \u00e0 0,1 mg\/g.<\/p>\n
Cette m\u00e9thode s'appuie sur la chromatographie d'\u00e9change d'anions \u00e0 haute performance coupl\u00e9e \u00e0 la d\u00e9tection par amp\u00e9rom\u00e9trie puls\u00e9e (HPAEC-PAD)[5][3][4]<\/sup>. Treize monosaccharides, disaccharides et trisaccharides diff\u00e9rents peuvent \u00eatre s\u00e9par\u00e9s par cette m\u00e9thode: fucose, arabinose, galactose, glucose, fructose, saccharose, lactose, lactulose, maltose, m\u00e9libiose, tr\u00e9halose, isomaltulose et maltotriose.<\/p>\n Cette m\u00e9thode s'applique \u00e0 l'\u00e9tiquetage des six principaux sucres qui peuvent \u00eatre pr\u00e9sents naturellement ou ajout\u00e9s dans le lait et les produits laitiers.
